Pan Roasted Fingerling Potatoes
Who doesn’t like potatoes? If you don’t, you have issues. This is my take of any good old oven roasted potatoes recipe. You do need a heavy coated pan for this. Girls, the only other department you need to spend money on other than shoes, are good cookwares.2 lbs of fingerling potatoes
3 cloves of garlic chopped
3 tablespoons of butter
2 tablespoons of olive oil
4 strips of cooked bacon crumbled
1/2 cup of curly leaf parsley
1/2 teaspoon of salt
freshly ground black pepperStart by melting all the butter with olive oil, this brings the butter’s smoke point up by almost half. Next dump everything into the pot, cover and turn the heat down to low. Toss every 3-5 mins till the potatoes are fork tender. Toss it with some extra chopped curly leaf parsley for color.
